Philippine's Fried Banana Rolls (Turon)

Tackling another dessert here! This time, it's one of my favorites. While the ingredients of this dish might be harder to come by especially for non-tropical countries, it is a definitely easy and quick dish to make. This dish is basically deep fried plantains called Turon by the Filipinos. Topped with vanilla ice cream, this will surely be a new addition to your list of staple comfort foods!

Ingredients:

5-6 pieces of plantains, cut lengthwise
1 1/2 cup sugar
Spring roll wrapper
1/2 cup water
1 cup sliced jackfruit - optional (canned jackfruits can be found at the International Food Section of Rimi)
2 cups oil for frying
1 pint vanilla ice cream

Procedure:

1.  Place the sugar on a plate. Take the sliced plantains and roll those on the sugar. Make sure that the plantain is coated evenly. Repeat the process with the rest of the plantains.
2. On another plate, lay the spring roll wrapper open. Place the sugar-coated plantain and the jackfruit (optional) on one side. Fold the sides towards the plantain to ensure that it won't spill out as it cooks. After that, take the bottom corner (closest to you) and fold over the filling, take the left and right corners, fold them towards the middle, then continue rolling upwards until the end of the wrapper.
3. Use water the seal the very edge.
4. In a medium-sized frying pan, add two cups of oil.
5. Once the oil is hot enough, gently place the rolls on to the pan and fry until the golden brown.
6. Traditionally, sugar is added as the oil starts heating up. For safety purposes, I recommend just sprinkling a bit sugar on top once it's cooked. Since the rolls are still warm enough, the sugar will dissolve and will caramelize a little.
7. Place the cooked rolls on another plate. Add a cup of vanilla ice cream on top. Enjoy!
