South Korean Street Toast (Gilgeori Toast)
Ingredients:
1 cup cabbage, sliced thinly
1 carrot, sliced thinly (julienned)
2 scallions
1/2 teaspoon salt
1/2 pepper
1-2 eggs
butter or margarine
2 slices of white bread (or multi-grain bread will be yummy as well!)
1 teaspoon of white sugar
bacon or ham (optional)
cheese slices
ketchup, mayonnaise, and mustard to taste
Procedure:
1. To start everything off, place the sliced cabbage, carrot, and scallion in a bowl. Add in the salt and pepper and mix for about 30-40 seconds. Try squeezing them all together with a pair of tongs, fork, or simply, just your hands. This will break the veggies down and incorporate everything well together.
2. Crack in the eggs and mix again.
3. Heat up a frying pan and add some butter. Once the butter is hot enough, place the toasts on the pan and toast, move them around a bit in order for the bread to soak up the butter. Flip the toast and do the same thing over.
4. Place the toast on to a plate and sprinkle a little bit of sugar on top.
5. On the same pan, add the remaining butter. Once it is hot enough, place the egg mixture to fry. Be careful, use one spoon or spatula in each hand to shape the mixture according to the size of your bread as it cooks. Cook for a couple of minutes or until slightly golden brown. Flip and do the same on the other size. Top the egg mixture with bacon and cheese.
6. To finish up, place the omelette on top of one of the toasts. Add ketchup, mayonnaise, or mustard on top to taste. Afterwards, place the other toast on top and serve. Enjoy!
